Pairing wine and food is a delicate dance—guided by balance, intuition, and a willingness to explore. Some combinations sing instantly, others grow on you with time, and a few… simply part ways. I approach pairing with curiosity and care, crafting experiences that respect both the wine and the dish—never forced, always intentional. Because like all meaningful relationships, the best pairings are built on harmony, not compromise.

The thing about great wines is that, in most cases, food is not a pairing partner but a visitor to showcase another layer of taste. Enjoying a glass of wine with a homemade meal enhances both flavours and the moment we live in.

Sake

Deep in the fermentation room at Origami Sake, where tradition meets precision. As a sommelier, it’s a rare treat to get this close to the craft—feeling, smelling, and understanding the process behind every drop. I truly appreciated the warm welcome and the chance to learn from such passionate makers.

Tasting Our Roots

Let’s then, shed some light on the tight correlation between land and plants. Do they feed off each other, complete each other, or together create something new? It could be one of the three, or all together.

But the truth is, when ‘tasting’ – having a sip – will undoubtedly connect with our own roots, even if just for a moment.

Placing poetry on the side for a second or two, soils have tremendous impact on the wine itself. Also, climatic forces define the traits of the wine. Dolomitic limestone soils , kept the vivacity (acidity) and make the wine age-worthiness. The ‘Ora’ wind (very punctual each day around noon), help to keep in this case flavours concentrated.
